Description

Students will learn about 9 classic culinary vegetable cuts by creating a booklet, using a practice chart with play doh, and getting into the kitchen! They will look at the dimensions or description of each cut, what it is used for and what vegetables are typically found in that form.

There is a full 5 day lesson plan with lab ideas that allow students to cut and cook their chopped vegetables, including a vegetable tray with homemade ranch, crispy potatoes and egg rolls. A grocery shopping list is included to make it easier to figure how much of everything is needed in lab.

The nine cuts include:

  • Julienne
  • Batonnet
  • Brunoise
  • Small Dice
  • Medium Dice
  • Large Dice
  • Rondelle
  • Diagonal
  • Chiffonade
