When my students first get this project, they think it is going to be easy--but then they realize that demonstrating the functions of the brain is harder than it seems.
Students pick eight parts of the brain (from a vocab assignment they had earlier) and, using higher order thinking skills, develop and build amusement park rides that demonstrate the function of those parts.
